The second venture for partners Casey Parker, Joe Gunn and Adan Trinidad, Sancho Pistola’s is set to supply Fishtown with the same high-quality modern Mexican fare, choice craft brews and cocktails that’s earned Jose Pistola’s in Center City recent raves. Puebla, Mexico-born chef Adan Trinidad took the reins in Jose’s kitchen last fall, raising the culinary bar with spot-on renditions of updated Mexican classics like carnitas, tortilla soup and more. At Sancho — the name is a Spanish slang term for “the other man” — the team lays out a lengthy menu of solid standards like fresh guacamole, soft tacos, loaded nachos and spicy wings.
