At Higgins, we are fortunate to be situated in one of the world’s most fertile, productive and diverse agricultural regions – the Willamette Valley. The moderate climate supplies us with a year-round steady stream of stunning ingredients with which we craft our menu of classic country dishes. There exists today a growing need for our commitment to sustainable food practices. This broad and complex topic relates to a responsibility that we all share in the stewardship of our soil, water, and air. We believe strongly in supporting farming techniques, which are sustainable, organic and regenerative. It is imperative that we re-establish the balance between nature and man in all of our food producing endeavors. Current large farming methods rely on a system of agriculture depends upon the use of herbicides, pesticides, petrochemicals and intensive irrigation. This system is non-renewable, non-sustainable and generally non-local.
