Koto Japanese Grill And Sushi Bar offers diners the very best in Japanese cuisine. While the word “Japanese” is in the name of the restaurant, Koto actually serves dishes from all over Asia. Diners will find plates with roots in China, Vietnam and even Thailand. Koto gets its ingredients locally whenever possible and has an excellent working relationship with the many farmers that work the Salem Farmer’s Market. Koto’s menu is split into two main sections. First is the sushi offerings, which come in both maki rolls or sushi and sashimi plates. The maki rolls range from the relatively simple avocado and cucumber to the house’s signature Koto roll with spicy tuna, shrimp tempura and avocado topped with tobiko and spicy king crab. The other half of the menu consists of grilled entrées like the yakisoba with shrimp, vegetable tempura, chicken teriyaki and scallop katsu.
